At Retaste, they choose to refine foods that stores would otherwise throw away and transform them into a luxurious dining experience. The trick is to use them properly: dry, put in, ferment, freeze or refine them in other ways. Every morning, the chefs go to the stores they collaborate with (COOP and Willy's) and collect "old" food. It can be cocktail tomatoes in plastic trays where a tomato has gone bad, bread that is not fresh, pasta, root vegetables, dairy products, cold cuts and more. "We don't care where the food comes from or what it is, we just make sure to save it," says Paul Svensson.
Dinner at Retaste made me completely reject the thesis that good food is about fine ingredients. Wrong! It's about how the ingredients are handled. Imagination, creativity and care are the secret. Some examples from the menu: root vegetable chips made from root vegetables with cream cheese dip made from milk that has just passed its best before date and paprika dip made from peppers that have started to get a little too wrinkled. Ravioli on stale bread doesn't sound very good, but stale bread can be baked into both pasta and crispbread. Peaches on the verge of aging were cooked with spices and served with meringue and wild herbs.
Trade and industry account for a lot of food waste and it is difficult to do anything about it as a private individual, but we can influence our own waste, here are some tips:
- make chips from root vegetables that are starting to look boring
- use your senses – best before date does not mean the food will go bad after a certain day, smell, look and taste it.
- You can make cream cheese or ricotta from milk that is approaching its best before date
- Freeze or dry fresh herbs that are not being used.
- Plan your purchases! Don't be tempted to buy a large package if you don't know that it will be used up before it is sold.
- Take inventory of the fridge before you go shopping - maybe you can put together something from what's there? Let your creativity flow!
- Save the leftovers and use them for lunch boxes, freeze them or transform them into a new dish the next day.
- Store food properly and it will last longer.
- The money you save can be deposited into a savings account and used for something fun you dream of.
