Sour is good
Vinegar:

-promotes digestion by helping to increase the stomach's secretion of gastric acid.

-balances both the intestinal flora and the bacterial flora in the skin. Beneficial for example for skin problems such as acne, as the vinegar's antibacterial properties also contribute to healthier skin.

-relieves sore throat: mix 1 dl lukewarm water with 1 dl apple cider vinegar and gargle.

-can be flavored with herbs and berries for use in food and drinks, see recipe below.

-is good for the hair and the pH value of the scalp, counteracts dandruff, stimulates hair growth and makes the hair shiny and soft. Use as a hair rinse.

-for a light antiseptic and balancing facial toner: mix 1 part apple cider vinegar with 4 parts water (2 parts for oily skin).

-cleans environmentally friendly! Clean windows with a mixture of half vinegar and half water. Also suitable for cleaning the toilet, wooden floors and refrigerator.

-increases insulin sensitivity and makes the food have a less blood sugar-raising effect. Keep this in mind if you eat pasta or white bread, for example, and add a few drops of vinegar to the dressing for your salad or whatever you are going to eat.

-is rich in antioxidants that reduce oxidative stress in the body. A good way to counteract cellular aging.

My best vinegar recipes:

Shrub

Shrub is a sour drink with roots that go back a long way. Berries were preserved with sugar and vinegar. The berries were eaten and the vinegar was used in home remedies and drinks. The drink is both healthy and works well as a base for all kinds of drinks with or without alcohol. Be sure to use clean utensils and containers.

3 cups berries

3 dl sugar or honey

2 dl apple cider vinegar

Place the berries in a clean glass jar and fill with vinegar to cover the berries. Close with a lid and leave in the refrigerator for at least 24 hours up to a couple of months. Taste it regularly, it is ready when it is sour and has the taste of the berries. Strain the vinegar twice and pour it into a saucepan, heat it up, add as much sugar as you have liquid and stir until the sugar has melted. Let the mixture cool before pouring it into sterilized bottles. Keeps for about 6 months in the refrigerator.

Oxymel

The name comes from Latin and means “sour honey”. A mixture of vinegar and honey that was used as medicine but goes well in food and drink. I make oxymel with fresh or dried herbs or with berries. Good: mix 1 tablespoon of oxymel with carbonated water and voila an elegant and healthy drink.

1 part honey

1 part apple cider vinegar

1 part herb or berry

Place all ingredients in a clean glass jar. Put the lid on. Place the jar in a dark place at room temperature. Leave for at least a month. Strain out any berries or herbs and store in the refrigerator.

Herbal vinegar

1 part herb spice or berry

4-5 parts apple cider vinegar

Place the seasonings in a clean glass jar, fill the jar with the vinegar, put the lid on and leave in a dark place for at least 2 weeks. Strain out the seasonings and save the vinegar in a bottle.
