Bang on the beetroot

The expression supposedly originated in Skåne in the early 1900s and refers simply to direct sex. Intercourse without foreplay. Today, the expression more generally refers to getting straight to the point . It's not sex I'm going to write about now, it's beetroot. So now let's get straight to the point - eat beetroot! They are nutritious, climate-smart, delicious, nutritious and simply a very good autumn and winter food.

In Sweden we have been able to enjoy beetroot Beta vulgaris since the 17th century. The Romans were the first to cultivate it, but its wild ancestor originated in North Africa. Initially, beetroot was used as animal feed, but gradually people began to like it. Not least, the sweet taste was appreciated during a time when sugar was in short supply. And we like sweet things.

Beetroot, like spinach, chard and Swiss chard, belongs to the plant family Chenopodiaceae . Beetroot is perhaps best known for its iron content and is therefore considered a blood strengthener. It also contains calcium, phosphorus, magnesium, sodium, carotene, folic acid and vitamin C, so it strengthens not only the blood but the entire body. The liver likes beetroot – they contain substances that protect the liver and stimulate the gallbladder to secrete bile (which allows us to break down fat).

If you can get hold of beetroot with a nice bloom, eat it too! It is rich in carotene and antioxidants. Do you need more arguments for eating beets? Here: they are considered calming for restlessness, reduce sugar cravings, satiate well, strengthen the immune system and purify.

As I mentioned earlier, it's smart to eat food in season and beetroot, which is Definitely a fall-winter food, it stimulates blood circulation so you feel warm.

Leave the peel on as it contains a lot of the nutrients.

They are also a good environmental choice because they are grown outdoors in Sweden.

How to eat beetroot:

      -  cooked with butter and salt

  • cut into thin slices served as carpaccio
  • like beetroot soup
  • like beetroot cake
  • like juice or smoothie
  • oven-baked
  • pickled
  • fermented

A smoothie that gives you energy. Fill up on chlorophyll, iron, and vitamin C. and energy now that summer is over. Nettles and dandelion leaves can be picked well into autumn.

1 dl beetroot juice

1 boiled, diced carrot

1 boiled cube of beetroot

1 cup fresh nettles

1 tbsp molasses

1/2 tsp fresh dandelion leaves

the juice of half a lemon

Mix in a blender and drink immediately.
